Plant-Based Sweet Potato Brownie

Sweet potatoes are awesome! You can make so much healthy plant-based vegan recipes with them. In this case I used them to do plant-based double chocolate brownies with a strawberry twist. This Brownie is so moist and filling thanks to the sweet potatoes. It’s a really guilt free plant-based dessert recipe. Scroll down to make it yourself!

Plant-Based Sweet Potato Brownie

Ingredients

-       450 grams cooked peeled sweet potato
-       75 grams almond flour
-       60 grams oat flour
-       10tbsp cacao
-       4tbsp agave syrup
For the topping:
-       Fresh strawberries
-       50-100 grams raw or vegan melted chocolate

Instructions

-       Put the oven on 180C/355F
-       Put all of the ingredients in a food processor and blend until smooth
-       Put parchment paper in a baking dish, then add the mixture in the baking dish and put in the oven for 25 minutes
-       When it’s done, let it cool in the fridge for about 15 minutes while you prepare the chocolate
-       Melt the chocolate over a water bath and chop the strawberries into smaller pieces
-       When the brownie has cooled down, place the strawberries on top and then pour over the chocolate. You can now place it in the fridge until serving time, then cut it up and serve!
