Vegan Mozzarella Pizza

This recipe serves one hungry person (one smaller pizza). Gluten intolerant? use gluten free dough. You can also find this recipe in the Fivesec Health App.

For the dough

  • 1 cup whole wheat flour (I used 50% whole wheat in this recipe)
  • 0.5 cup warm water
  • 0.5 tsp active dry yeast
  • 0.5 tsp sea salt

For the tomato sauce

  • 0.5 cup crushed tomatoes
  • 0.25 yellow onion
  • 0.5 tbsp tomato paste
  • 0.5 tsp thyme, dried
  • 0.5 tsp oregano, dried

For the vegan mozzarella

  • 0.25 cup raw cashew nuts, soaked 15 minutes in boiling water
  • 0.5 cup plant milk
  • 1.5 tbsp tapioca flour
  • 0.5 tbsp nutritional yeast
  • 1 tsp lemon juice
  • 0.5 tsp sea salt
  • 0.25 tsp onion powder

For the topping

  • 4 button mushrooms
  • 4 olives
  • 0.5 red pepper
  • 2 tbsp chopped basil
  • 1 tbsp balsamic


Pizza dough

  1. Mix the flour, yeast and salt in a bowl and then pour over hot water
  2. Mix the dough with your hands until no flour is left in the bowl, add more water or flour as needed

  3. Kneed the dough on a floured surface for about 5 minutes and the place it back into the bowl and put a towel over it, let rest for 1 hour

  4. Put the oven on maximum heat (at least 500F/260C), I use 572F/300

Tomato sauce

  1. Mix all ingredients in a blender, not too long because we want some clumps
  2. Transfer the tomato sauce to a saucepan and let it boil for about  5 minutes until it’s thicker, put aside

For the mozzarella

  1. Put all the mozzarella ingredients in a blender and mix until smooth, then transfer the mozzarella to a saucepan

  2. On low heat, constantly stir the mozarella until it becomes thick but don’t overdo it, check the video for consistency (up to the right)

  3. When the mozzarella is ready, pour over to a bowl and set aside until the dough is ready


  1. When the dough is ready, shape it how thin or thick you like it on an oven tray covered with parchment paper (or on a pizza stone if you have!)

  2. Now it’s time to assemble the pizza! Start with the tomato sauce then the mozzarella (don’t make the mozzarella too thin), continue with the sliced mushroom, pepper and olives

  3. Put the pizza in the lower part of the oven for about 10-13 minutes

  4. When the pizza is ready, top with some basil and balsamic!
