2 Ingredient Crêpes
This is seriously the fastest pancake recipe I have ever done! This recipe serves one hungry person (6 pancakes). You can also find this recipe in the Fivesec Health App.
Ingredients
For the crêpes
1 cup buckwheat flour
1 cup + 3 tbsp plant milk
(optional) if you want them sweet, add 1 tsp vanilla powder
For the filling
1 cup frozen strawberries
1 tbsp chia seeds
0.5 cup coconut cream (canned)
For the chocolate sauce
4 tbsp water
3 tbsp cacao powder
2 tbsp agave syrup
For the topping
1 tbsp almond butter
0.5 banana
4 fresh strawberries
0.5 tbsp cacao nibs
Steps
Crêpes and filling
Place the buckwheat flour and plant milk in a bowl and whisk until combined and let rest for 10 minutes, if it’s too thick add more water (check video for texture)
In meanwhile place the frozen raspberries in a saucepan on medium heat, let them melt and then mash them with a fork
When the raspberries are melted and mashed, add the chia seeds then pour the chia jam into a bowl and place in the fridge
From the chilled coconut cream can, scoop out the hard part and place in a bowl, mix with an electric whisk until the coconut cream is fluffy and set aside
Now make the chocolate sauce by combine all these ingredients in a bowl and mix with a spoon, set aside
Now cook the crêpes (1/4 cup batter at a time) in a non-stick pan on medium heat, when you are flipping them you might need to pull up the pancake with your fingers (check video)
When the pancakes are done, combine the chia jam with the whipped coconut cream
Spread the chia jam fluff on each pancake, roll them up and add your toppings!
