Glowing Potatoes
You know how pesto tastes like? And you know how delicious potatoes are? Well, very delicious in my opinion. Let’s combine these to a lovely mess, but oil free and of course animal free!
Why do I even call them glowing potatoes? I actually don’t have a crystal clear explanation but I do know that avocado is really good for you, and so are potatoes.. high in starch and increases your metabolism! Then there’s a ton of other nutrients in rest of the ingredients, you will simply feel glowing after eating this. :) Go and check out a video of this recipe on my Instagram @fivesechealth
Glowing Potatoes
Ingredients (serves 2)
- 600 g regular yellow potatoes
- 200 g mushrooms
- 2 tbsp sunflower seeds
- 8 cherry tomatoes
For the dressing
- 1 avocado
- 1 garlic clove
- 1 cup fresh basil
- 1 tbsp nutritional yeast
- 1 tbsp lime juice
- 0.5 tsp Himalaya salt
- 2 tbsp water
Instructions
- Start by cutting the potatoes into smaller pieces and put them in a pot and boil until soft (not soggy)
- While the potatoes are boiling, make the dressing by puting all the dressing ingredients in a blender and mix until smooth
- Now slice the mushrooms and cook them in a pan with some water, they should just become soft
- When the potatoes are done, carefully combine the dressing, potatoes and mushrooms
- Serve with chopped tomatoes and sunflower seeds!
