Plant-Based Spring Roll Bowl
If you have eaten spring rolls I bet most of you love them. But do you always love to roll them up? Well I don’t. So why not just eat the same ingredients but in a bowl :)
I know that we all don’t have the same ingredients in our spring rolls, so you can just swop out the different veggies if you want to. Oh.. and the peanut sauce is to die for!
Plant-Based Spring Roll Bowl
Ingredients (2ppl)
- 90grams dry rice noodles
- 1 cup shredded red cabbage
- 2 carrots
- 1 avocado
- ½ cucumber
- 1 red bell pepper
- ½cup chopped scallions
- 6 leaves romaine salad
- A bunch of fresh coriander
For the sauce:
- 2tbsp water
- 1tbsp peanut butter, no or low salt
- 1tbsp tamari, low sodium
- 1tbsp ginger, grated
- ½tbsp maple syrup
- ½ lime, juice
Topping:
- Sesame seeds, black or white
Instructions
- Start by cooking the rice noodles according to the package
- Prepare all of the veggies by chopping the romaine & coriander, slice the red bell pepper and avocado, thinly slice or use a spiralizer for the carrots and cucumber, shred or thinly slice the red cabbage
- Make the sauce by put all the ingredients into a bowl and whisk until combined
- Assemble your bowl with the rice noodles and veggies and top with sesame seeds!
