Plant-Based Sweet Potato Brownie

Sweet potatoes are awesome! You can make so many healthy vegan recipes with them. In this case I used them to do vegan double chocolate brownies with a strawberry twist. Sweet Potato Brownie, 10 brownies

Ingredients

For the brownies

  • 450 g sweet potato, cooked

  • 75 g almond flour

  • 60 g oat flour

  • 7 tbsp cacao

  • 4 tbsp agave syrup

For the topping

  • 2 cups strawberries

  • 200 g raw or vegan chocolate

Steps

  1. Preheat the oven to 180C/355F

  2. Put all of the ingredients in a food processor and blend until smooth

  3. Add the mixture in an oven safe form (make it 2cm/0,8inch thick), prepared with parchment paper, and put in the oven for 25 minutes

  4. When it’s done, let it cool down in the fridge for about 15 minutes while you prepare the chocolate

  5. Melt the chocolate over a water bath and chop the strawberries into smaller pieces

  6. When the brownie has cooled down, place the strawberries on top and then pour over the chocolate. You can now place it in the fridge until serving time, then cut it up and serve!
